If you find yourself constantly missing out on your most important meal of the day due to your restless and bustling lifestyle, these quick and easy on the go healthy breakfast recipe could be your ideal life-saver. These breakfast treats are ideally heavy and appetizing, but more importantly, you can bake/ cook them up in no time as well. This helps you make sure you do not skip out the meal even when you are on a hectic schedule.

Fried Egg Sandwich 

The classic fried egg sandwich is the perfect meal to kick-start your day. What’s not to like? It is easy, simple, and downright fulfilling as well.    

What ingredients you will need 

  • White bread, toasted – 8 slices (or your ideal number of slices)
  • Processed Cheese – 4 slices 
  • Eggs – 4 
  • Mayonnaise – 2 tablespoons
  • Butter – 2 teaspoons    
  • Ketchup – 2 tablespoons 
  • Pepper and salt for taste

Directions to prepare

  • Take a large skillet and melt butter over medium-high temperature. Crack the eggs and cook it sunny-side up. 
  • Place a slice of Cheese over each egg. Cook until the Cheese fully melts. 
  • Toast the breads (optional) and cut them into two slices diagonally.
  • Season the eggs with pepper and salt.
  • Place the eggs on individual slices of bread.
  • Spread ketchup and mayonnaise on the remaining bread and cover the eggs to form a sandwich.  
  • Serve warm. 

Parchment Baked Eggs 

Eggs and breakfast are two indispensable elements, and this unique treat helps you appreciate the iconic duo by giving it a flavorful twist. 

What ingredients you will need 

  • Olive oil – 1 tablespoon 
  • Sweet potato, cut into cubes – ½ portion (1 cup)
  • Mozzarella Cheese, shredded – 2 tablespoons 
  • Paprika, smoked – ½ teaspoon
  • Scallions, thinly sliced – 1 tablespoon (for garnish)
  • Eggs – 2 
  • Dried thyme – ¼ teaspoon 
  • Salt and pepper (seasoning)

Directions to prepare 

  • Preheat the oven to 350⁰F. 
  • Take a 14″ x 12″ parchment paper, fold, and cut it in half into a square shape (get creative with the shape).
  • Unfold the parchment paper and spread it on a baking tray. 
  • Place the cubed sweet potatoes and season with dried thyme, smoked paprika, olive oil, pepper, and salt. 
  • Spread the potatoes uniformly and make two holes (well) on the base. Crack the eggs and gently drop them in each one of the wells. Season the egg with a light sprinkle of pepper, salt, and mozzarella. 
  • Seal the parchment paper by covering the edges. 
  • Slide the ingredients in a preheated oven, and bake it for about 15-20 minutes. A minute or two extra if you prefer your eggs well done.
  • Gently peel off the upper parchment cover and garnish with scallions.
  • Let it sit for a minute or two before digging in. 

Breakfast Sandwich Heaven

If you like to start out your day with a big smile (and a bigger belly), this unconventional breakfast sandwich made of a glazed donut is your ideal choice of meal.  

What Ingredients you will need 

  • Egg, beaten – 1 
  • Bacon crumbled – 1 
  • American Cheese – 1 slice 
  • Milk – ¼ cup 
  • Donut, glazed – 1
  • Dried chives – 1 pinch 
  • Sausage patty – 1 

Directions to prepare 

  • Take a glass measuring cup and mix together crumbled bacon, eggs, and chives. 
  • Microwave the mixture for about 90 seconds to 1 minute, or until the mixture is solid in the center. 
  • Take a small-sized skillet and heat it over medium temperature settings. Cook the sausage patty until it becomes hot in the center or about 2-3 minutes on each side. 
  • Use the thermometer to check for ideal sausage temperature (160⁰). 
  • Slice the glazed donut into two equal portions. 
  • Slide the sausage, egg mixture, and Cheese between the donut slices. 

Shakshuka

Sounds exotic, doesn’t it? This simple and exotic Middle-Eastern breakfast meal is a treat that will leave you drooling all day.  

What ingredients you will need 

  • Tomatoes, unseasoned – 2 cans 
  • Paprika – ¼ teaspoon 
  • Tomato paste – 2 tablespoons 
  • Onion, chopped – 1 (medium)
  • Garlic – 1 clove 
  • Red pepper – 1 
  • Chili powder – ¼ teaspoon 
  • Harissa – ½ teaspoon 
  • Olive oil – ½ tablespoon 
  • Eggs – 5/ 6
  • Cayenne powder – a pinch 
  • Salt – a pinch 
  • Pepper – ½ teaspoon 
  • Coriander (garnishing)

Directions to prepare 

  • Take a medium-sized skillet, pour olive oil and let it sit over medium-high heat temperature. 
  • Chop the red peppers, onion, and garlic, and let it cook in the skillet for about 5-6 minutes, or until the onion turns golden. 
  • Add the tomato paste, chopped tomatoes, and harissa into the skillet. Stir and mix the ingredients well until they fuse completely. 
  • Allow the mixed sauce to reduce a bit by letting it simmer for about 5-8 minutes. Sprinkle salt and pepper to taste. 
  • Spread out the sauce evenly throughout the skillet using a spatula.
  • Crack the eggs and drop it gently over the tomato sauce (don’t pile all the eggs in one place). 
  • Cover the skillet and let it cook for another six to seven minutes (tops). (Do not overcook it as you want the yokes and sauce to retain a slightly runny texture).
  • Remove the cover and see if the eggs are white. If yes, kill the heat and garnish with chives and coriander on top. 
  • Cut in slices and serve immediately.
